I’ve been craving Hot Pockets lately and keep looking for a good sale to match up with my measly 50¢ coupon. But there haven’t been any good sales and what the hell is in a Hot Pocket, anyway?

I decided to make them homemade and found a good recipe . I made ham & cheese and chicken, broccoli & cheese. Both fillings had a couple spoonfuls of cream of chicken soup, and a handful of shredded co-jack. I used chopped, sliced ham in one filling. The other got pre-cooked shredded chicken breast I took out of the freezer and some thawed broccoli.

Mix and roll the dough, plop on some filling, crimp, bake for 20 minutes. A little time, a few ingredients from the pantry and freezer, and I had eight hot, homemade pockets of goodness.
