I put so much work into arranging this salad that Michael said, “Are you on a Food Network show?” No, I just wanted a pretty lunch…
Top: romaine, radishes, yogurt cheese cubes, tomatoes and grilled lemon-herb-garlic chicken (It’s almost too pretty to eat. Almost.)
Bottom left: beer batter bread and grapes
Bottom right: Italian dressing (only 10 calories) and an apple cereal bar
I think this is a good mix of fresh fruit and veg, a healthy amount of protein and just a bit of carbs. I’m trying to reduce carbs, but I figure my beer bread is healthy because I made it – no chemicals and unpronounceable ingredients.
