Although you can barely see it, the base of this box is a salad with cabbage, spinach, celery, carrot and wild onion.
In the butter stick keeper are two homemade chicken fingers left over from last night’s dinner.
In the monkey container (thanks again Candace) is Parmesan cheese and sesame sticks. There’s a packet of Marzetti Light Italian Dressing on the left. (My father in law, Bruce, brings me leftovers from the wedding receptions at the hall where he works. He brought me two gallon baggies full of Italian and Honey French dressing. They’re awesome for lunches.)
In the little rectangle on the right, is a tiny yogurt parfait: strawberries, raspberry yogurt and coffee cake topping. Let me explain: I made a coffee cake a few weeks ago with cinnamon, brown sugar, chocolate chips and walnuts. When I cut it, topping fell all over the counter. I saved the topping in the fridge and have it on ice cream and, now, yogurt. Waste not, want not.
On the far right is a bottle of baby veggie juice I bought at Big Lots for 60 cents. After I drink the juice, I’ll keep the bottle for future lunches,
I’m really looking forward to this healthy and colorful lunch.
