Every month Michael and I get a box of macaroni and cheese with our Angel Food order. I don’t like macaroni and cheese at all and Michael only eats it every once in awhile. I’ve been using the macaroni and just saving the cheese packets until I could think of what to do with them. Here are two ideas and hopefully I’ll think of more.
Fiesta Cheese Sauce
1 ounce cream cheese, warmed slightly in microwave
2 t cheese powder from boxed macaroni and cheese
1 T of your favorite salsa
1 T sour cream
Mix cheese powder with warmed cream cheese. Mix in salsa and sour cream. Serve cold or warm up in microwave. Serve with your favorite tortilla chips.
Servings: 1 or 2
Notes: You can make a great easy salsa with a can of tomatoes with green chilies, dried onion, parsley, cilantro (if desired), salt and pepper. Just dump the canned tomatoes in a container (I like glass jars.) Season to taste . Keeps in the fridge for a couple weeks.
Broccoli Cheese Rice
1 cup hot cooked rice
1 t butter or margarine
2 t cheese powder from boxed macaroni and cheese
2 t milk
1/4 cup broccoli, cut into small pieces, cooked
Jane’s Crazy Mixed Up Salt or salt, pepper and garlic powder
Mix rice, cheese powder, butter and milk until well combined. Stir in broccoli and season to taste. Serve warm or reheat later.
Servings: 1 or 2
Notes: You could add or substitute cauliflower, carrots or onions in this dish. Steam your veggies in the microwave. You can use any kind of rice – long grain, instant, basmati, white and wild mixture, brown, etc.
