Like alot of my recipes this doesn’t have specific measurements. Just use as much of each ingredient as you like and depending on how many people you are feeding.
1 to 2 cups chicken (any boneless kind, cut in bite sized pieces or cheat and use the precooked refrigerated or frozen kind)
1 to 2 cups cooked white rice (either make your own or cheat and buy the precooked “ready rice”)
1/2 to 1 cup chopped onion
1/2 to 1 cup seeded and chopped bell pepper (I used yellow and purple, but use any color you like)
1/4 to 1/2 can condensed cream of chicken soup (freeze the rest for another use)
chicken broth or water
olive or vegetable oil
spices such as: Spike, parsley, Aunt Jane’s Mixed up salt, pepper, Mrs Grass, etc.
Cook chicken chunks in a skillet with a little oil (or heat up precooked chicken). Add some spices. Add chopped onion and saute for a few minutes, add peppers and saute to desired doneness. Reduce heat, stir in rice and soup. Add broth or water if needed to thin the soup. Taste and adjust seasoning. When mixture is heated through, serve to hungry family and friends.
You could use brown rice, wild rice, chicken flavored rice pilaf, ramen noodles, spaghetti, orzo or couscous. You could just make the chicken, peppers and sauce and serve it in a tortilla or pita bread. Instead of mixing the rice (or pasta) in with the sauce you could serve it on the side or make a mound of rice (or pasta) and use the chicken and peppers like a sauce.
