Millennium Salad

torn romaine (add spinach for more vitamins)
grape or cherry tomatoes
diced red (or sweet yellow) onion
canned hearts of palm, drained
crumbled crisp bacon (low sodium or turkey)
jarred marinated artichoke hearts (drained of excess oil)
crumbled blue cheese (reduced fat)
hard boiled egg, sliced (use white only to cut calories and fat)

Use as much lettuce, tomato, onion and hearts of palm as you like for each salad. Top with one or two crumbled slices of bacon, two or three artichoke hearts and a tablespoon blue cheese. Garnish with hard boiled egg.

Use your dressing of choice: Ranch, Thousand Island, balsamic vinaigrette, etc.

I had this salad at Millennium Park in Chicago. Anything in parentheses is my addition or suggestion. The salad came with thousand island dressing and while I wasn’t crazy about it, it went well with the ingredients. I like to use a mix of 1 part Ranch with 2 parts balsamic vinaigrette.
