I recently went to make two things on two different nights, both times forgetting I was out of eggs. I made the same substitution for both recipes and they came out great.
I made potato pancakes or potato cakes, whatever you want to call them. I used 1 cup leftover mashed potatoes (with butter and milk), 2 tablespoons flour, 1/4 teaspoon Jane’s Crazy Mixed Up Salt and, instead of one egg, 1 tablespoon of mayonnaise. Form mixture into small patties of about 3 tablespoons each. Fry in a hot skillet with a couple teaspoons of oil until browned on both sides.
Michael was feeling unwell and wanted breaded chicken fillets. I mixed up some seasoned flour (flour, Jane’s, parsley, pepper, seasoned salt, Essence, Spike, paprika) and dredged the chicken in that. Alas, no eggs. So I thinned the mayonnaise with water until it was the consistency of egg wash. I dipped the chicken in that. I added bread crumbs to the rest of the seasoned flour and coated the chicken one more time. Fry in shallow oil until golden brown and delicious.
I wonder what other recipes I can sub mayo for eggs?
